One of the most eagerly anticipated events during the recent Galway Food Festival was a specially curated five-course meal in Brasserie on The Corner, one of Galway’s most popular restaurants, located in the heart of the city on Eglington Street.
The ‘A Taste of Brasserie’ menu on the night was created by newly appointed Head Chef David O’Donnell to introduce the restaurant’s new spring menu with each course complimented by paired wines from Nicholson Wines.
David O’Donnell is well-known in Galway culinary circles having previously headed up the kitchens at Dulse Restaurant in Barna and at the Ardilaun Hotel in Taylor’s Hill. He brings a passion for using locally sourced ingredients to Brasserie on the Corner and this was evident in each of the courses during the meal.
Local suppliers including Achill Oysters, Aran Goats Cheese, Gannet Fishmongers, Heaney Meats and Hazel Mountain Chocolates all featured prominently on the menu, highlighting the excellent produce that is available in the region.
Course after course had guests licking their lips with pleasure; – from the creaminess of the tangy Gabriel Faherty’s Goats Curd which kicked off the meal, to the saline freshness of the Achill Oyster served in the half shell with Lime Pearls & Horseradish Gel which followed.
Glandore Harbour John Dory was next up served with caramelized fennel, a cauliflower emulsion, homemade linguini and finished with a dill foam. This was paired with a fantastic Rustenberg Chardonnay from South Africa – a wonderfully balanced wine with hints of apricot and marzipan on the nose and a fresh acidity on the palate.
Whilst all the courses went down a treat, it was generally felt that the dish of the evening was Angus Beef Fillet Mignon – comprising unbelievably tender beef served with a carrot and mustard seed purée, roasted red onion and a rib cap croquette. This was paired with a highly aromatic Cantos de Valpiedra from Spain which retained enough acidity to counteract the richness of the beef… simply delicious!
The meal finished with a surprisingly light Pistachio Olive Oil Cake which also included a Velvet Cloud Citrus Yoghurt Foam and some Charred Pear on the side.
It’s easy to see why Brasserie on the Corner is one of Galway’s most popular restaurants… definitely one to visit if you’re in the West!
