Time for a treat if you’re in Paris over the next couple of weeks; spice entrepreneur Arun Kapil, of Cork based Green Saffron Spices, will be taking over the Balcon Bar at the Alcazar restaurant, 18 Rue Mazarine, St Germain, located in the 6th arrondissement of Paris.
After 3 months of recipe development, and a week of working in the Paris Kitchen, Arun is ready to launch the pop-up restaurant. The Green Saffron pop-up will run Tuesdays to Saturdays for the entire month of May. “I’m there next week, all week. If you’re thinking of popping by, then do, I really appreciate the love on this, my convoluted spice odyssey!” says Arun.
The pop-up, titled ‘The turn of épices’, ties in with the launch of Green Saffron products in 230 Carrefour hypermarkets across France from July 1st 2016. The Green Saffron range of spices, sauces, chutneys and rices are already available in Monoprix stores nationwide.
The menu will be ‘local market’ based, and will change depending on what’s available and at its best on that particular day. A sample menu will include snacks, small dishes, main dishes and desserts. Each dish will showcase Arun’s trademark – spice. Sancks include pani puri shells, stuffed with spiced chick pea & potato, tamarind water and vodka to start,and house french fries sprinkled with turmeric salt. Diners can choose from small dishes such as Pop corn Cajun shrimp with hot pepper mayonnaise, or white asparagus tartare, with spices, paneer and soft herbs.
For the main event, dishes like duck breast ‘Vindaloo’, with chaat masala, AAA basmati rice, & frozen banana curd, and seared salmon tatiki, with ondant of smoked aubergine, ginger mint & coriander are on offer, and there are Petit pots aux chocolat, and truffles with pistachio halva to finish.
