Corrib & Corrib Lake View Rooms – Recently refurbished and each designed in an individual and elegant style, enjoy the comfort of a luxurious Corrib Room. With luxurious king-size beds and fully interactive plasma screen TVs with movies and music on demand, you’ll enjoy a host of thoughtful touches for a memorable stay. A number of these rooms have stunning views over Lough Corrib to gaze upon as you relax.

Deluxe Rooms – Antique speckled and reflective of the rich history of the property, deluxe rooms have the added bonus of a seating area in which to reflect on your grand surroundings. Feature beds and fresh flower complete the opulent feel of these rooms, and many have views of the lake.

Junior Staterooms –Four poster beds, classic decor rich with regal furnishings, dotted with every modern convenience you could desire and magnificent views are guaranteed in the stunning Junior Staterooms. Many have split levels and all are illuminated by stunning chandeliers.

Staterooms –Located in the oldest part of the Castle, dating back to the 13th and 17th centuries, Staterooms offer high-ceilings and a distinct feel of grandeur. Complete with spacious bathrooms, some of which contain pedestal claw baths, many Staterooms also include a log fireplace for the ultimate comfort factor.

The George V Dining Room

The George V is named after the Prince of Wales, who visited Ashford in 1905 before becoming King George V. The Guinness family built the dining room in his honour and today it is home to a 2 AA Rosette winning restaurant which won “Yes Chef Best Hotel Restaurant in Ireland 2016”.

Acclaimed Executive Chef Philippe Farineau serves exceptional dishes inspired by his French heritage and the recipes of Beatrice Tollman, expertly paired with an extensive wine collection by Chief Sommelier Robert Bowe. The pinnacle of the George V experience is Chef Farineau’s tasting menu, served in nine or twelve courses, which is heavily seasonally driven and utilises only the finest ingredients.

Elegant, contemporary dishes such as Wild Venison & Bitter Cocoa with Blackcurrant Gel and Mandarin Jelly or Hen of the Wood Mushroom & Duck Foie Gras, followed by sumptuous desserts such as “Opalys” Chocolate, Blood Orange & Juniper Berry by talented Executive Pastry Chef Paula Stakelum. At George V you truly can dine like royalty.

The Dungeon

The Dungeon is a more casual dining affair, serving classic Irish cuisine in comfortable and relaxed surroundings with curved historic ceilings. A bistro style menu is perfect for a laid back dinner in a stunning setting.

Cullens at the Cottage

Tucked away in the Hideaway Cottage is Cullen;s at the Cottage, the perfect venue for a relaxed dining experience with a seasonally focused menu of classic dishes, inspired by owner Beatrice Tollman. Cullens is home to a bespoke rotisserie used to make Tollman;s signature Chicken Peri Peri and is surrounded by manicured gardens with views of Ashford Castle.

WINE EXPERIENCE AT ASHFORD CASTLE

The Wine Cellars at Ashford Castle offer private wine tastings and wonderful wine dinners in the secret passageways of the castle, which were unearthed during recent renovations and provide a stunning backdrop for the experience which was recently named Best Wine Experience in Ireland at the Restaurant of Ireland Awards 2016.

The 16th Century tunnels provide three unique private spaces with an intimate ambience and soft lighting, using a Coravin system for tasting expensive bottles without having to take the cork out, keeping the wine fresh for longer and allowing the patron to sample a wide variety of fine wines.
