This is simple, nutritious sweet potato wedges recipe you can put together quickly. Ideal for a light supper or after school snack.

Ingredients
For the sweet potato wedges
• 2 large sweet potatoes
• 2 cloves of garlic crushed
• 2 tablespoons of black Cajun seasoning
• 3 tablespoons of extra virgin olive oil
• 1 large pinch of rock salt
• 6 hickory smoked rashers
• 100g of grated extra matured white cheddar
• 2 tablespoons of sour cream
• 1 tablespoon of fresh coriander chopped
Method
Sweet potato wedges
– Wash the sweet potatoes, keeping the skin on
– Cut the potatoes in large wedges and place in a baking tray
– Season with the rock salt, Cajun seasoning and the 2 crushed cloves of garlic
– Add in the olive oil and mix thoroughly to coat all of the wedges with the rub
– Roast in a pre-heated oven at 180◦C for 15 to 20 minutes, until golden brown.
– To check if the wedges are cooked, insert a sharp knife, it should go in easily if they are fully cooked
– Place rashers under a hot grill until they’re crisp and chop them up
– Lay the wedges flat on a baking tray and top with the chopped crispy bacon and the cheese
– Place under the grill until the cheese has melted
– Sprinkle the chopped coriander on top
Serve with the sour cream on the side and enjoy!
