BBQ Pulled Mushroom Burger Recipe by Ciara Daly

This BBQ Pulled Mushroom Burger recipe is a healthy alternative to the ever popular pulled pork. Mushrooms are in season all year round and are much cheaper than a loin of pork so you can use those savings to buy yourself something nice like a good old-fashioned ‘Choc Ice’ in the shop later on after dinner. Ideally oyster mushrooms are best in this recipe as they are a similar texture to that of slow roasted pork, but they can be hard to get your hands on so don’t stress if you have to resort to using good old button mushrooms.

Pulled BBQ mushrooms are complimented perfectly served in crusty burger buns, if you can get your hands on wholemeal nutty buns then you really will be on to a winner. The bit of crunch from the seeds provides you with absolute bliss!

Serves 4

Ingredients:

BBQ Pulled Mushrooms

500g mushrooms, sliced finely
1/2 red onion, sliced
2 garlic cloves, minced
5 – 6 tbsp BBQ sauce
400g Purple cabbage slaw
4 wholemeal seeded burger buns
salt and pepper
1 – 2 tsp rapeseed oil

Purple Slaw

½ head purple cabbage
2 apples
2 carrots
Handful of sunflower seeds
2 tbsp cider vinegar
5 – 6 tbsp natural yogurt
Salt & pepper

Method:

1. Place a large pan on a medium low to heat. When the pan is hot, add the oil.
2. Add the onions and mushrooms and gently fry until nice and soft, around 7 – 8 minutes.
3. Add in the BBQ sauce, mix it through the mushrooms and heat so that it is warmed.
4. In the meantime, toast the burger buns so they are nice and crisp.
5. Spoon on a generous helping of the slaw, followed by the mushrooms and top it off with the burger bun before serving up to your adoring diners.
6. Tuck in!
