Northern Ireland's New Signature Dish is Revealed

Northern Ireland’s Year of Food and Drink 2016 is coming to close, but after setting a challenge to four of Northern Ireland’s top chefs Tourism Northern Ireland have created a new regional signature dish that is sure to leave a lasting legacy of what has been an amazing culinary year. The winning dish was unveiled at St.George’s Market on Saturday 10th December as Born and Braised: Shin of Northern Irish beef served with beetroot and bone marrow gremolata. THE SEARCH IS ON TO FIND NI’S NEW SIGNATURE DISH:

The four chefs were tasked with creating three brand new locally-inspired dishes. The public was then invited to vote for their favourite dish which were served in restaurants across Northern Ireland.

While Born and Braised took the first place, other dishes also received a great response. The runner up recipes were Jowled Eel (Pork and Eel Broth) served with a buttermilk bun, and Buttermilked Lamb with a wild garlic puree.

The talent chefs and creative minds behind this fantastic legacy referred to as the ‘cooking collective’, are Niall McKenna from James Street South in Belfast; Ian Orr from Browns Restaurant and Ardtara House in Derry~Londonderry; Kelan McMichael from Bull and Ram in Ballynahinch and Chris McGowan from Wine and Brine in Armagh. All three dishes will be served at all of their restaurants.
