Chapter One Restaurant opened in February 1992 with co-proprietors Ross Lewis and Martin Corbett. It is located in the basement of the Dublin Writer’s Museum on Parnell Square in Dublin’s city centre. Located close to The Gate Theatre, this is the place for the perfect pre-theatre meal or a luxurious and relaxing celebratory experience.
Known as one of Ireland’s finest restaurants, Chapter One is run by an exceptional team including the widely revered Chef Patron Ross Lewis, head chef Eric Matthews, front of house manager and co-owner Martin Corbett and Sommelier Edward Jolliffe. Since opening, Chapter One and its teams in both the kitchen and restaurant have been the recipients of numerous awards for both service and food, most notably earning a Michelin star in 2007, which has been retained every year since.
Ross Lewis places huge emphasis on maintaining close ties with exceptional producers, who provide the raw materials for the French-inspired modern cuisine on offer here. Menus are highly influenced by changing seasons and are composed of contemporary dishes, elegantly plated.
