Celebrated chef Jeff Norman of The Woodlock Brasserie at Citywest Hotel made his Ireland AM debut this morning, whipping up a delicious and simple recipe using fantastic Irish seafood for presenters Alan Hughes and Ciara Doherty.
Jeff served up a classic dish of Smokies. Made with natural smoked haddock, Gruyere cheese and white wine, his recipe is a luxurious and tempting way to use an often underrated fish and the dish went down a treat.

The chefs at The Woodlock take producing delicious dishes very seriously and techniques include curing their own gravalax in a light treacle marinade to give Atlantic salmon truly mouth-watering flavours and dry-aging beef in house, typically for 28 days, and infusing the steam in a vapogrill with wild garlic garden herbs to complement the perfectly succulent beef.
Expect menus with tempting dishes like West Coast Scallops with Pressed Rare Breed Pork Belly and Connemara Hill Lamb Moroccan Tagine – all created with the finest locally sourced ingredients.
