About the Dish
The essence of this dish lies in two key elements. Firstly the freshness of the scampi itself. We buy direct from Clogherhead fishermen and when you shop you need to look for glistening produce. It literally needs to shine brightly and smell sweet, like the sea. The other key element is the batter. We have developed this recipe over time and it really is crispy, light and allows the scampi to shine through. Like eating a sea breeze, only sweeter.
180g Dublin Bay prawns
75g corn flour
75g plain flour
1 egg, lightly beaten
188ml cold soda water
- Sift flour together in a medium bowl.
- Add egg and soda water.
- Mix until combined.
- Allow batter to stand for a few minutes.
- Heat oil in a large saucepan.
- Holding prawns by tail, dip in the batter and allow to drain away.
- Deep fry prawn until batter is very lightly browned and prawns have turned pink and are cooked through.
