Egg White Muffins Recipe

This summer, Hooked Restaurant was named as one of Bord Bia’s Just Ask Restaurant of the Month winners. Selected by food writer Georgina Campbell and Bord Bia, the Just Ask Restaurant of the Month rewards eateries across Ireland that exhibit best practices in showing transparency in the sourcing of the food on their menus.

To celebrate their win, owner of Hooked, Anthony Gray and head chef Joe McGlynn have shared their Egg White Muffins recipe with us, a quick and light delight for the warmer summer months.

Located in Sligo, this atmospheric venue is another welcome venture from well-known Sligo restaurateur Anthony and his wife Eilish. With nicely timed service from attentive and well-informed staff, this welcoming restaurant is full of heart – and a great addition to the town’s wide-ranging dining options.

Ingredients:

For the guacamole
– 4 avocados
– 2 roasted red peppers in vinegar
– 2 red onions
– 50g coriander
– 2 limes

For the egg white muffins
– 100g spinach
– 16 cherry tomatoes
– 6 egg whites
– 2 egg yolks
– Feta cheese
– 2 garlic cloves crushed
– Salt and pepper
– Guacamole
– Almond butter
– Sourdough bread

Method:

For the guacamole
1. Dice the avocados, red peppers, red onions and coriander. Then juice and zest two limes.
2. Mix all ingredients together and add salt & pepper to taste.

For the egg white muffins
1. Grease muffin tins with a small amount of low fat grease spray.
2. Wilt the spinach in a frying pan with the garlic and two tablespoons of water.
3. Slice the cherry tomatoes in half and place the halves in each muffin tin.
4. Top with spinach.
5. Crumble over feta cheese.
6. Whisk together the egg yolks and whites and add a teaspoon of salt and pepper.
7. Ladle the egg into the muffin tins, filling then up completely.
8. Bake in a preheated oven at 155°C for 20-25 minutes until golden brown.
9. Serve immediately with guacamole, almond butter and toasted sourdough.
