Aaron is recognised for his unique pallet and approach to creating cocktails inspired by music, stories and moments.
He is trying to combine old traditional Dublin ideology with modern Dublin style: “We take old Dublin folklore and stories you’d hear in your local about town and put our spin on them with our unique cocktails.”
A good example of Aaron’s style is “The Lugs Brannigan” cocktail, which is named after a Garda who was a tidy boxer and the only one to handle the gangs in Dublin.
