With a strong focus on utilising locally sourced ingredients, Chef Enda opts to serve up classic dishes cooked over gas flames for ultimate precision and superior results on the plate. Offering a tempting array of cuts for carnivores, as well as plenty of enticing alternatives for vegetarians and pescatarians, Martine’s has earned a reputation for simple but well executed dishes.
Serving up a tempting dish of Pan Fried Irish Salmon, with green beans, mushrooms and basil pesto, Enda demonstrates how cooking over the direct heat and easily controlled gas flame results in the perfect sear for salmon, crispy skinned and melting within.
Martine’s features on this week’s episode of The Restaurant, which airs on March 28th at 9pm on TV3, featuring singer Mary Coughlan as the guest chef for the night.
