Spoil your guess over the festive season with this simple Goat’s Cheese Crostini Christmas Canape Recipe. Served with a sweet red onion marmalade, that complements the salty goat’s cheese, and a sprig of thyme this crispy canapé is a perfectly balanced bite.
Makes 20
Ingredients:
Crostini
– 1 small baguette
– 4 tablespoons olive oil
Red Onion Marmalade
– 120g Siúcra Rich Dark Brown Sugar
– 1tbsp rapeseed oil
– 20g butter
– 500g red onions, sliced thinly
– 80ml red wine
– 4tbsp red wine vinegar
Goat’s Cheese Crostini
– 1 log of goat’s cheese
– 20 small sprigs of thyme to garnish
Method:
Crostini
1. Preheat the oven to 180°C or 160°C for a fan oven.
2. Slice up the baguette into thin slices. Brush with olive oil.
3. Place on a baking tray and pop in the oven for about 10 minutes until beginning to turn golden.
4. Remove and allow to cool.
Red Onion Marmalade
1. Put the oil and butter into a medium sized pot and melt over a medium heat.
2. Once melted add the sliced onions and stir to coat.
3. Allow the onions to cook over a medium heat for 8-10 minutes stirring frequently.
4. Add the Siúcra Rich Dark Brown Sugar and stir to coat the onions. Cook for 1-2 minutes until the sugar melts and comes to the boil.
5. Add the red wine and red wine vinegar and bring back to the boil.
6. Reduce to a simmer for 15-20 minutes until the liquid has evaporated stirring frequently.
7. Turn off the heat and allow to cool.
8. Store in a clean sterilised jar in the fridge for up to one month.
Goat’s Cheese Crostini
1. Slice the goat’s cheese into 20 slices.
2. Top the crostini with a slice of cheese.
3. Top with a spoonful of red onion marmalade.
4. Garnish with a sprig of thyme and serve.
