Holy Smoke’s Decky Walsh to Show Off His Smokey Skills at Pitmaster Masterclass This September

As part of the 2017 programme of events for the A Taste of West Cork Food Festival, Decky Walsh, head chef of Cork’s most on-trend restaurant, Holy Smoke, is bringing all his culinary skills to the Celtic Ross Hotel in Rosscarbery for an exciting Pitmaster Masterclass, on Sunday 10th September, 3-7pm.

Kate Ryan of Flavour.ie is behind the event which will see Decky Walsh share the art of on-trend cookery technique to be sweeping across Ireland, smoke and fire cookery.

Hot on the heels of The Brill Grill Festival in Dublin and just ahead of the World BBQ Championships in Limerick in October, Ireland has truly started to embrace this method of cooking that is as old as time.

A great opportunity to learn from one of the best in the business, after the masterclass attendees will be treated to a feast including everything that Decky and his team will have been cooking throughout, culminating in the unveiling of the block pit where meats will have been slowly cooking overnight.

Speaking on his return to West Cork for event Decky says: “We’ll be using six different methods for cooking over fire and smoke, using different rubs, brines, marinades, woods and charcoals to really get the best flavour out of everything we cook. I want this experience to be as hands on as possible, so I’ll be encouraging people to get stuck in too – it’s the best way to learn and to feel confident about using the techniques the moment you get back home. It’s going to be amazing!”

Taking place at the Celtic Ross Hotel in Rosscarbery, West Cork tickets can be purchased securely online at www.flavour.ie/pitmaster and cost €75pp.
