Honey, Honey, How This Smoke And Honey Evening Will Thrill You

On Friday 9th November, Cliff at Lyons is hosting a supper club for all the honey lovers out there. Head Chef Nathan Dimond will treat guests to a mouth-watering feast to celebrate this year’s Honey Harvest.

We were lucky to experience a fantastic summer this year, but while we were soaking up the sun in the garden, the bees were hard at work. Cliff at Lyons were lucky to get a honey crop they didn’t expect until next year and they want to share the sweet nectar with you!

Their honey is quite light but with more depth to the flavour than we would be used to from the supermarket. Bramble (blackberry) nectar is an important contribution to most Irish Summer Honey, but this was also a very good year for clover and its nectar gave the honey a lighter colour.

The event kicks off at 7pm, where guests will be treated to Honey and Thyme Loaf on arrival. Each table will have the option to share a pitcher of their homemade Killer Bee Cocktail which sounds equally delicious and dangerous!

To commence the meal there will be a starter of Home Smoked Salmon with Honey Caviar, Garden Cucumber, Herbs and flowers. The main course includes 12 hour smoked Beef, Honey Glaze, Skillet of Potato and Onion Rosti, Honey Glazed Parsnips and Heirloom Carrots. To finish off the meal, there will be a Smoked Honey Tart, Roast Pineapple and Bourbon Vanilla Ice-cream.
