Salmon, Pear, Soya, Wasabi, Lime Coriander
Ingredients
Salmon
– 300g salmon centre fillet
– 50g coarse sea salt
– 50g caster sugar
– 10 cracked black pepper
– 10g fresh chervil finely chopped
– 10g fresh dill finely chopped
– 10g fresh tarragon finely chopped
– 5g smooth French mustard
For this recipe the salmon undergoes two separate cures, each lasting 24 hours. All other garnished should be prepared in advance so all you have to do is garnish the plate.
Method
Skin the salmon, run your fingers against the grain of the flesh and remove pin bones with a tweezers. Mix sugar, salt and sugar well together, layout a double layer of cling film at least twice the size of the salmon and place half the marinade on the cling film, place the salmon on top and spread the remaining marinade on the salmon. Wrap well with cling film and refrigerate for 24 hours
Next day unwrap salmon, scrape of and discard the first marinade. Mix the chopped herbs, layout the cling film as before and smear with the Dijon mustard and finally top evenly with chopped herbs, wrap tightly with cling film and refrigerate for a further 24hours.
Pickled Pear
1 pear cut into ½ cm cubes
Juice of 1 lemon
For the pickled pear simply, squeeze lemon juice on to the pear cubes
Wasabi Crème Fraiche
25g freme fraiche
Wasabi paste to taste
Zest of ½ a lemon
Mix all ingredients to preferred taste, be careful not to add to much lemon juice as the crème fraiche will become to tin.
Remaining Ingredients
Pickled ginger
Dark soya sauce
Olive oil
To assemble the dish, finely slice the salmon and place on a plate garnish with the rest of the garnish ingredients as per the photo.
