I can quite proudly say that I am a self-confessed dip addict! These three hummus recipes can be enjoyed with crackers, vegetable crudités or with a salad. As I’m such a huge hummus fan I’ve created three delicious but very different flavours.
Ingredients:
Classic
– 1 x 400g tin chickpeas, drained
– 2 garlic cloves, peeled
– Juice of 1 lemon
– 3 tbsp tahini
– 1 tsp ground cumin
– 3 tbsp extra-virgin olive oil, plus extra to serve
– Pink Himalayan salt or sea salt and freshly ground black pepper
Pea and Mint
– 300g (2 cups) peas, fresh or frozen
– 2 spring onions, trimmed
– 10 fresh mint leaves
– 2 tbsp tahini
– 1 tbsp extra-virgin olive oil
– Zest and juice of ½ lemon
– Pink Himalayan salt or sea salt and freshly ground black pepper
Pink Beetroot
– 1 x 400g tin chickpeas, drained
– 2 garlic cloves, peeled
– 1 beetroot, roughly chopped
– Juice of 1 lemon
– 2 tbsp tahini
– 3 tbsp extra-virgin olive oil
– Pink Himalayan salt or sea salt and freshly ground black pepper
Method:
Classic
1. Pulse the chickpeas and garlic cloves together for 1 minute in a food processor.
2. Add the rest of the ingredients along with a pinch of salt and pepper and a splash of water until smooth and whizz. Serve drizzled with extra-virgin olive oil.
Pea and Mint
1. Cook the peas in a saucepan of boiling water for about 3 minutes,
then drain.
2. Finely slice half a spring onion and set aside.
3. Add the peas to a food processor with the remaining 1½ spring onions, the mint, a splash of water, the tahini, olive oil and lemon juice.
4. Whizz to your desired consistency, I like it to be quite chunky.
5. Keep in the fridge until ready to serve, then sprinkle with the lemon zest and the sliced spring onion.
Pink Beetroot
