Delicious European Lamb Wrap Recipe with Guacamole From #LambTryItLoveIt

European lamb is a versatile ingredient and a natural choice for Irish consumers in search of a quick and easy, light summer recipe. With a wide variety of cuts available, European lamb is perfect for a range of dishes and cooking methods and with Irish lamb among some of the best in the world, it’s worth getting adventurous with this locally-loved ingredient.

These lamb wraps with guacamole from #LambTryItLoveit are simple to prepare and the perfect option for a light and tasty summer snack enjoyed al fresco.

Preparation time: 45 minutes
Cooking time: 10 minutes

Makes 6 large wraps (or 8 medium)

Lamb Wraps Recipe 1Ingredients:

For the lamb
600g lamb leg steaks
3 tablespoons olive oil
1 level teaspoon chilli powder
1 level teaspoon ground cumin

For the guacamole
2 ripe avocados
2 limes
Salt and freshly ground black pepper
2 tablespoons chopped coriander

To serve
2 tomatoes
½ cucumber
1 red onion
1 romaine lettuce
6 large wraps (or 8 medium)

Method:

For the lamb
1. Mix the oil and spices in a bowl, add the lamb steaks and mix well. Cover and leave to rest for 30 minutes at room temperature.
2. Pre-heat a frying pan without oil on a high heat. When the pan is hot, add the lamb steaks and cook for 2 minutes on each side.
3. Reduce the heat and cook for a further 2-3 minutes on a very low heat (depending on your preference and the thickness of the meat). Season to taste and leave to rest for 2 minutes.

For the guacamole
1. De-seed the avocado and scoop out the flesh into a bowl.
2. Add salt and freshly ground pepper, coriander and lime.

To serve
1. De-seed the tomatoes and dice. Dice the cucumber and finely chop the red onion. Slice the romaine lettuce. Place all these ingredients in separate bowls.
2. Heat the wraps in the microwave between 2 plates.
3. Cut the meat into small strips and serve immediately along with the wraps, the guacamole and the bowls of tomatoes, cucumber, red onion and lettuce so that everyone can make up their wraps themselves.
