Massaman Chicken Recipe from Saba Restaurant

Massaman Chicken Recipe is a favourite at Saba, and now you can recreate it at home with Chef Tao’s original recipe. For an authentic finish sprinkle with crispy shallots, crushed peanuts and served with Thai jasmine rice.

Serves 4

Ingredients:

3 dsps sunflower oil
2 heaped dsps massaman curry paste
800ml coconut milk, 21pc fat
2 cinnamon sticks
4 star anise
4 kaffir lime leaves, torn
3 dsps fish sauce
2 dsps tamarind juice
2 dsps or 40g palm sugar
6 dsps unsalted, roasted peanuts, crushed
480g chicken fillets, sliced 2cm wide
300g potatoes, diced and par-boiled
150g onion, diced Serve with 25g crispy shallots
1 dsp unsalted, roasted peanuts, crushed

Method:

1. Bring the wok to a medium heat, add the oil and massaman curry paste and stir for two minutes or until it begins to cook.
2. Add the coconut milk and bring it to the boil. Let it boil for two minutes, then add the cinnamon stick, star anise and kaffir lime leaves.
3. Season with the fish sauce, tamarind juice and palm sugar, then add the crushed peanuts. Stir until the sauce thickens.
4. Now add the sliced chicken, potatoes and onion and cook for approximately four minutes. Remove the cinnamon and star anise.

Serve:
Sprinkle with crispy shallots, crushed peanuts and serve with Thai jasmine rice.
