Massimo Bottura among International Guests to Visit Galway for Food on the Edge 2016

Massimo Bottura, Italian chef behind Osteria Francescana (which recently reached the top position at the St. Pellegrino’s World’s 50 Best Restaurant ranking), is part of the prestigious guest list to visit Galway next October for Food on the Edge, a two day symposium that takes place annually in the Irish city and gathers chefs and food enthusiasts from all around the world who want to create a better global network.

This year the symposium will occur on Monday 24th and Tuesday 25th October 2016 and it will serve as a stage for over 40 speakers to offer 15 minutes talks on the cultural, social, environmental and educational aspects of food. All the guests were carefully chosen taking into account their contributions to food culture.

Speaking at the event, Symposium Director, JP McMahon said, “I am delighted to announce the line-up for the second year of Food On The Edge 2016. The event is not about elitism; it’s about inviting chefs from all over the world who I feel have something to say, be that 3 Michelin stars or chefs running street food trucks! We have a stellar line-up of chefs this year including chef owner of the world’s best restaurant, Massimo Bottura, Peruvian chef Virgilio Martinez and a number of return speakers from last year.”

JP McMahon is a chef, restaurateur and author. He is Culinary Director of the award-winning EatGalway Restaurant Group, which comprises Aniar (Michelin Star), Cava Bodega and Eat Gastropub. He also runs the Aniar Boutique Cookery School.

The emphasis for the talks will be their perspective on the future of food and how we can make things better on both a local and a global level. The goal will be to “inspire action through debate and dialogue”. The full list of guest speakers (available at the event’s website) was announced yesterday (27th of June) at a launch in Fade Street Social and includes relevant names in the global scene such as Gabrielle Hamilton, Daniel Burns, Mark Best and Andrew Wong, as well as national talents such as Cliodhna Prendergast and Dylan McGrath.
