This simple and healthy marinated Lamb Chops Recipe is made with a fresh mint marinade, and served with seasonal baby new potatoes. Dinner is on the table in just three easy steps!
– 2 lamb chops
– a handful of mint chopped
– 2 tsp cider vinegar
– glug of camelina oil
– salt and pepper
– new potatoes
1. Finely chop the mint leaves and add to the camelina oil, cider vinegar and salt and pepper. spread on both sides of the chops and pop under a grill, turn over to cook on both sides.
2. Whilst the chops are cooking pop the new potatoes into boiling water and cook.
3. Serve warm with butter melting over the new potatoes.
