This month we have been travelling the country to bring you the best of Ireland’s food and drink from Dublin, Kilkenny, Galway and Wicklow. Top chefs such as Ken Harker, Neven Maguire, Shane Smith and Fiona Uyema are giving inspiration for some seasonal Winter warming recipes and some Asian inspired delights. Unfortunately for us the taxi driver we had booked was a little eager (to put it mildly) to get there from Kilkenny city, where we were staying the night. “If it ain’t broke don’t fix it” was a phrase uttered by many when Brasserie Le Pont announced a complete refurb and name change to boot. Having been fans of the old incarnation we were interested to see what vision Director Fiona Kelly had in mind. Like many Dublin venues which may have been tarred with a slightly stuffy image the team decided it was time for a total rebrand with a more relaxed feel and with better use of the unique space.

Dining in The Strawberry Tree at Brook Lodge in Macreddin Village is a unique dining experience and one that I will remember for a long time. As Ireland’s only certified organic restaurant, the menu only includes organic or wild ingredients and their provenance is proudly displayed throughout the menu which is opportunistic in its use of ingredients, drawing on what is in season and locally available or can be foraged nearby. This results in food that is unusual, playful and thought-provoking on many levels.
