In the village of Kilcoole, just south of Greystones in Co. Wicklow, there is a craft brewery that defines itself with figures: “14 beers, 3 brothers, 1 brewery, 0 shortcuts.” O Brother Brewing, ran by -you guessed it- siblings Barry, Padhraig and Brian O’Neill, opened in 2014 and while proudly announced, its more than the sum of its numbers.
Passion, the unquantifiable attribute that gives craft products that special edge, is perceivable on their beers, made in the style that the family likes to drink themselves.
The Fixer Red Ale is one of their signature bottles, and at 5,5% ABV, it feels very well balanced: nor too weak, nor too strong.
When poured, you can see its head is thick and creamy, staying for a long time on top of the glass. Beneath it, a mahogany coloured body shows harmony achieved by blending six different types of malt and five hop varieties, including chinook, known for its spicyness and pine aromas; citra, smooth citrus notes; and simcoe, which adds an earthy and fruity character.
Flavours of toasted hazelnuts and caramel, malty and with a delicate not of tropical fruit and blood orange, its a rich and mouth filling pint.
Its and ideal beer to enjoy mid-spring, light enough to be freshening under the mild April sunshine, rich enough to be comforting on a chilly day.
