Oreo Fudge Cake Recipe by Karyn Ryan

Cookies and cake are a match made in heaven and it doesn’t hurt in the slightest to add some fresh strawberries into the mix. Altogether they make one very delicious Chocolate Cake, a quick and easy bake and a great hit with kids and adults alike!

Ingredients
130g plain flour
25g (plus 2tbsp) cocoa powder
1/2 tsp baking soda
1/4 tsp table salt
115g unsalted butter, melted and warm
300g cups packed light brown sugar
2 large eggs
1 tsp pure vanilla extract
1/2 cup hot water
250ml cream
1 punnet strawberries
1 packet of Oreos

Method
1. Preheat the oven to 350 F. Grease the bottom of an 9 x 2-inch round cake pan or line it with parchment
2. In a small bowl sift the flour, cocoa powder, baking soda and salt
3. In a large bowl, combine the melted butter and brown sugar with a wooden spoon or rubber spatula. Add the eggs and vanilla, mix until well blended
4. Add the flour mixture all at once and stir just until all the flour is moistened. Pour the hot water over the batter and stir just until it’s incorporated and the batter is smooth. Scrape the batter into the prepared pan
5. Bake until a toothpick inserted in the center comes out clean: about 30 minutes for a 9-inch pan, 35 to 40 minutes for an 8-inch pan. Let cool in the pan on a rack for 10 minutes
6. Whilst cake is cooling, whip the cream
7. Turn the cake out onto a serving plate. Break the packet of Oreos in half, crush one half finely to crumbs with a rolling pin and add this to the whipped cream. Break the remaining Oreo into chunky pieces
8. Wash and cut the strawberries in 1/2
9. Pile whipped Oreo Cream onto top of cake and add chopped strawberries and crumble the Oreo chunks on top
