The Pantry & Corkscrew in Westport is Named Just Ask Restaurant of the Month for September

Selected by food writer Georgina Campbell and Bord Bia, the Just Ask Restaurant of the Month rewards eateries across Ireland that exhibit best practices in showing transparency in the sourcing of the food on their menus. This month, the prestigious title has been awarded to The Pantry & Corkscrew in Westport.

Head chef Dermott Flynn and his wife, Janice O’Rourke, who manages front of house, opened their small restaurant in Westport in 2010 and brought a rustic casual dining experience to the town, which they have developed over the years.

A new direction for Dublin native Dermott, who previously worked as a homeless services manager, he and his wife made the move west to start a new chapter. Dermott retrained as a chef at The Cooks Academy and completed his WSET’s in 2009/2010.

Speaking about the ethos of their restaurant, the pair commented: “We pride ourselves in using as much local, organic and free range produce as possible from the land, earth & sea. As followers and members of the Slow Food Movement, we build our seasonal menus from what is available in the area.”

As a small restaurant we get regular quantities of small deliveries from our suppliers which ensures that all of our dishes are produced using the freshest local ingredients and we are certainly blessed with those here in the west.

Describing where their produce comes from, they added: “Our beef is locally sourced from McCormack’s of Westport & Kelly’s of Newport and our Certified organic beef & free range organic pork is sourced from Andarl Farm in Galway. We only use Irish free range chicken and eggs in our dishes.”

“Our fish is always fresh from local west of Ireland waters or the north east Atlantic with Starcrest being one of our main suppliers. All shellfish is from Killary Shellfish, with most of our vegetables and salads being organic and locally sourced from Joe Kelly in Kiltimagh & Lavin’s in Castlebar”.

“We use Velvet Cloud Sheep’s Yoghurt in many of our dishes and Gabriel from Aran Islands Goats’ Cheese provides us with wonderful produce. We are also quite fond of our local beer producers, Mescan Brewery, whose beer not only tastes good but cooks beautifully too.”

Crediting their success to not only to the wonderful producers they use, the pair praised their team: “We are very lucky and grateful to have had such a dedicated team through the years, both in the kitchen and front of house which is a key element in the delivery of what we do.”

Westport is known for the range and quality of its restaurants and The Pantry & Corkscrew is up there with the best. With its casual relaxed dining approach, dedication to customer service and creation of dishes using only quality and local ingredients, it’s a gem not to be missed in the heart of Westport town.
