The Pigeon Projects, innovative dining series at The Pigeon House Clontarf has already seen sous chef Sam Kindillon and chef Dan Duffy launch successful kitchen takeovers.
Now, on Wednesday 16th August, it’s the turn of chef de partie Eoin Morris to take control of the kitchen for one night only.
For €35 per person, each guest will be treated to a seasonal seven course tasting menu designed by Eoin that takes advantage of autumn’s bounty.
Tomato and Fennel Bread with herb butter will be followed by Scallop Ceviche spiked with orange, yuzu and ginger and Cod served with girolles, broad beans, peas, bacon and chervil.
Following a Sorbet course diners will indulge in an autumnal dish of Duck, fig, beetroot, blackberry and pistachios.
To finish Peaches will be combined with yoghurt, honey and almond, and just when you thought it couldn’t get any better a Macaron will be served for a final sweet flourish.
Speaking about the Pigeon Projects chef patron Brian Walsh said: “I came up with the concept of giving the kitchen over to one of my chefs, once a month, to do what they want.”
“There’s a huge buzz about it and a lot of them already have their menus drafted up. They are all excited to help out the other guys, and there’s a big sense of camaraderie.”
