Raspberry and Coconut Oat Porridge Recipe from The FODMAP Friendly Kitchen Cookbook

It would be a crime for me not to include an oat porridge recipe, when I eat it as often as I do. Put simply, this is velvety and delicious and a great way to start the day.

Serves 1

Ingredients:

50g rolled oats
250ml lactose- or dairy-free milk of choice
1/2 tsp sea salt
1 tbsp peanut butter (optional)
1 handful of raspberries
1 handful of coconut flakes

Method:

1. Put the oats in a saucepan, pour in the milk and sprinkle in a pinch of salt.
2. Bring to the boil and simmer for 4–5 minutes, stirring from time to time to prevent sticking.
3. Take off the heat and stir in the peanut butter, if using.
4. Spoon into a bowl and top with a handful of fresh raspberries and a showering of coconut flakes.
