Rope Mussels With white wine cream recipe by Chef Richie Wilson at Sole Restaurant, using the finest of Irish ingredients in a classical dish. Dublin’s SOLE Seafood and Grill launches their “Afternoon Seafood Tower”, offering a lunchtime selection of the most popular Irish seafood on a tiered serving platter.
– 500 g Fresh Rope Mussels
– 100 ml White wine
– 400 ml Cream
– 100 g chopped shallots
– 2 crushed garlic cloves
– 1 tsp chopped thyme
– 1 tsp chopped flat leaf parsley
– 1 Bay leaf
– 1 Lemon
1. Begin by heating a pot with a little oil, add in the shallots, garlic and thyme. Stir this gently for 1 to 2 minutes. Now add the white wine and bay leaf and bring to the boil.
2. Place all the mussels in the sink under cold running water and give them a good wash around each other trying to remove any beards or gravel or sand that may have gathered on them.
3. Place them in a strainer and strain well until all the water is gone.
4. Add the mussels to the pot of boiling white wine and place a tight-fitting lid on. Steam for about 2 minutes before giving the mussels a really good stir before adding the cream then return to the heat for another 2 minutes.
5. By now all the mussels should have opened and are ready to be served.
6. Just finish with a little freshly chopped flat leaf parsley and a squeeze of lemon. Enjoy.

Richie has been working in the food industry for 20 years and has been an Executive Chef for the past 8 years. Prior to his appointment at Fire, he was Executive Chef of The Clyde Court and Ballsbridge Hotels, The Burlington Hotel, The Morrison Hotel and The Hilton Hotel Dublin.
He has brought with him his dedication to Irish produce and artisan producers to create his own ideas of what modern Irish food should be.
SOLE Seafood & Grill opens for lunch on Fridays and Saturdays from 12 noon and the “Afternoon Seafood Towers” are available until 4.30pm. SOLE also offers both an A La Carte menu and an Early Bird menu which starts at €32.50 for two courses. SOLE is open from 5pm Monday – Thursday and 12pm Friday and Saturday.
