Rum Cocktails – Tropical Tipples to Kickstart Summer.

If there is a spirit that evokes summer it’s rum. Versatile, mellow and with a wide appeal, it’s the darling of bartenders and often, the tipple of choice during holidays, festivals and our enjoyment of sunny locations. While savouring a fine sipping rum is quite pleasurable, the sugar cane spirit is a bona fide team player that tends to shine its brightest as part of cocktails and mixed drinks.

CLASSIC DAIQUIRI

One of the most iconic rum cocktails is the Daiquiri. This zesty combination of white rum, sugar and lime juice has a fascinating history and an array of flavoured versions that some love and some love to hate. But while the fruity renditions have many sympathisers, none like the original!

Ingredients:

 1 1/2 oz white rum
 1 1/2 oz fresh lime juice
 1/2 oz simple syrup

Method:

1. Add all ingredients to a cocktail shaker filled with ice and shake vigorously.
2. Strain into a chilled coupe or martini glass.

PROSECCO MOJITO

The minty best-seller gets a fizzy makeover this time. Enjoy this sparkling combination of two of the most popular summer drinks!

Ingredients:

 2 oz white rum
 3/4 oz fresh lime juice
 3/4 oz simple syrup
 6 – 8 mint leaves
 Prosecco to top

Method:

1. Muddle the mint gently in the glass.
2. Fill with crushed ice.
3. Add the lime juice, rum and simple syrup.
4. Top with Prosecco.

COCONUT MARTINI

Rum and coconut are best friends. You can keep it minimalist and let this white tipple as is, or sprinkle a bit of cinnamon on for extra flavour and a touch of colour.

Ingredients:

 1 1/2 oz white rum
 1 oz coconut liqueur
 1 1/2 oz coconut milk
Cinnamon (optional)

Method:

1. Place all ingredients in a cocktail shaker filled with ice.
2. Shake and stir into a martini glass.
3. Sprinkle cinnamon to taste.

DARK ‘N’ STORMY

Going to the other extreme of rum’s many shades, dark rum stars in this spicy and ultra easy mixed drink that needs no shaker and leaves no mess. For an extra intense flavour, make sure you’re using ginger beer and not ginger ale!

Ingredients:

 2 oz dark rum
 3 oz ginger beer
 1/2 oz fresh lime juice
 Slice of lime (garnish)

Method:

1. Pour the rum and the lime juice into a glass filled with ice.
2. Top with the ginger beer and stir gently.
3. Garnish with a slice of lime.

AÑEJO HIGHBALL

This elegant yet refreshing cocktail was created by legendary bartender and author Dale DeGroff (a.k.a. “King of Cocktails”, really). “Añejo” is Spanish for aged, and its name after the golden aged rum that makes the base for the drink.

Ingredients:

 1.5 oz añejo (aged) rum
 1/2 oz orange Curaçao
 1/2 oz fresh lime juice
2 Dashes of Angostura Bitters
2 oz ginger beer
Orange peel

Method:

1. In a highball glass filled with ice cubes, pour the rum, Curaçao and lime juice.
2. Top with the ginger beer, add the bitters and stir.
3. Garnish with orange peel.

COQUITO

The name translates from Spanish as “little coconut” and this sweet sip is the Puerto Rican cousin of eggnog. If you like cream liqueurs and White Russians this tropical treat is a must-try! While some versions involve slowly cooking the ingredients together, this yummy shortcut will get you a delicious batch of coquitos in no time.

Ingredients (makes 1 litre):

 7 oz golden rum
 4 oz coconut milk
 4 oz coconut cream
 3 oz evaporated milk
 6 oz condensed milk
 1 tsp vanilla extract
 1 tsp cinnamon (garnish)

Method:

1. Mix all the liquid ingredients together (a whisk will come handy!).
2. Serve with plenty of ice cubes or crushed ice.
3. Top with cinnamon.

BETWEEN THE SHEETS

Despite its provocative name, this classic is not nearly as famous as it deserves to be. If you enjoy a Sidecar, this rum-fuelled sibling is one to discover.

Ingredients:

 1 oz white rum
 1 oz Cognac
 1 oz Triple Sec
 1/4 oz fresh lemon juice
 Orange peel (garnish)

Method:

1. Add all ingredients (except the garnish) to a cocktail shaker glass filled with ice and shake vigorously.
2. Strain into a chilled coupe.
3. Garnish with orange peel.

ZOMBIE

This monster of a cocktail is one of the most popular Tiki drinks of all times and it has passed the test of time and seen many trends come and go. So strong that it is said some bars won’t mix more than two for the same customer, this fruity rum bomb will take you to Hawaii with each sip. The original recipe from the 30’s is quite complex, so the below is a modern rendition you can make at home.

Ingredients:

 1 1/2 oz golden rum
 1 1/2 oz dark rum
1/2 oz 151-proof rum
 1/2 oz lemon juice
 1 1/2 oz passion fruit puree
 1 1/2 oz pineapple juice
 1 1/2 oz orange juice
 Dash of grenadine
 Orange slice (garnish)
 Maraschino cherry (garnish)

Method:

1. Stir all the ingredients (except the 151-proof rum) together and pour into a large glass with crushed ice (a highball will do, but for extra drama get a curvy hurricane glass).
2. Gently float (pour on the surface of the drink) the 151-proof rum and carefully flame it.
3. Garnish with orange peel and a cherry.
