Social Gallery: Add Slane Castle’s New Gandon Room Restaurant to Your Summer Dining List

Slane Castle has recently launched an exciting new restaurant and bar that should definitely be on your must-visit list.

The Conyngham Family have appointed Fitzers Catering Limited to operate The Gandon Room and Browne’s Bar, with Katherine James Budriene being appointed Head Chef.

A Boyne Valley native, she has developed a reputation for high quality food and elegant presentation. All ingredients will be fresh, locally sourced and prepared in a way that enhances their natural flavour.

There will also be signature dishes inspired by Lord Henry and Lady Iona and the menu will be both interesting and affordable.

The Gandon Room is inspired by James Gandon, one of the principal architects of Slane Castle, who also designed the Customs House and the Four Courts in Dublin.

An elegant and dramatic room, it has been transformed into a comfortable and glamorous restaurant with Gandon’s original designs for the Castle on display in the bookcase.

Browne’s Bar meanwhile, is named after the legendary Castle House-Keeper, Mary Browne. Designed in an eclectic fashion and featuring Rock n’Roll memorabilia of the many artists who have performed at the Castle over the years, this cosy space also has an unusual snug capable of seating up to 12 people for a quiet drink.

Browne’s Bar will be open daily with a casual and varied menu including coffee, home-made pastries, cakes and a New York Reuben sandwich.

The Gandon Room will be open for Dinner Thursday to Saturday and for lunch on Sundays 12 pm to 8 pm.

Speaking about this new venture, Fitzers Catering commented: “Fitzers Catering have been the dedicated caterers in Slane Castle for events since 2012 and have built a close relationship with the Connyingham family over the years.

We are extremely excited to have joined forces with Slane Castle to collaborate on the opening of the Browne’s Bar & The Gandon Room Restaurant, which should prove to be as iconic as the castle itself.

The bar and restaurant concepts located within the castle itself are not only steeped in history, but will offer customers outstanding food and beverage in a relaxed yet sophisticated setting.

Fitzers Catering have worked to recruit locally and source ingredients from suppliers in the surrounding areas. We are confident that the offering is something  that the whole community in Slane, and indeed the Boyne Valley region can truly enjoy.”
