The Cliff Townhouse chef Sean Smith is renowned for creating both simple and complex dishes based on Ireland’s finest seafood, but he takes on a novel challenge this February; creating a special dinner to showcase the flavours of Spain, based on his own experience of significant time spent there, as his wife is from Galicia.
Every summer for many years Sean has explored parts of Spain, and on Tuesday February 23rd next he will draw on this experience, along with some guidance from his wife, to create a five-course Spanish-inspired dinner.
Each course will be paired with a different wine, in partnership with Wines of Spain and presented by well known wine expert John Wilson, so from flinty Fino to elegant Albariño, and some other varieties that you may not be as familiar with but are sure to love, there will be carefully selected wines to match and enhance every course.
Dishes on the evening will include oysters with Cava dressing and Canary Islands potato mojo sauce; baby squid stuffed with chorizo, mussels and parsley sauce; crab ravioli with tomato, basil and Manchego; and pork cheeks with brown shrimp croquette and black pudding.
The Spain on the Green dinner takes place on Tuesday February 23rd, starting with pre-dinner drinks at 7pm. Tickets for the 5-course dinner including wines are €79 per person.
