The stylish five-star hotel has teamed up with prestigious house Bollinger Champagne to create a superb experience at their brasserie.
The evening will begin at 7:00 pm with a bubbly reception at The Marker’s rooftop, where guests will enjoy canapés along with the lively Ayala Champagne, from a smaller, modern house part of the Bollinger family.
As the night progresses, attendees will be seated in the restaurant where another four courses will delight their taste buds as more Champagne flows. Start with King Scallop or Melon, Parma Ham and Basil paired with Bollinger Special Cuvée NV; then continue to a course of either Wild Salmon or Irish Crayfish, Samphire and Country Butter, Sorrel, matched by the complex character of legendary Bollinger La Grand Anneé Rosé 2005.
For the main course, choose between John Stone’s Beef Fillet or Foie Gras, Truffle, Girolles and Sherry, and indulge in the elegance of Bollinger La Grand Anneé 2005.
For a sensational finish, try the Cherry, White Chocolate and Vanilla dessert along with Bollinger Rosé NV.
