The Blind Pig is a classic 1920’s style speak-easy, steeped in intrigue, mystery and masterful mixology with Paul Lambert at the helm. In true speakeasy fashion, The Blind Pig’s location has changed frequently, moving across the city with an official address of ‘location unknown’.
Guests have been directed to hidden doors down secret alleys, and ushered in with the utterance of a password. Currently tucked away in an intimate basement location in the city centre, The Blind Big is a truly unique destination to imbibe some of the finest cocktails in Dublin – but be sure to pay heed to the traditional ‘House Rules’, which includes a black-list of cocktails which must never be ordered.
In return for adherence to the rules, expect hand-crafted creations unlike anything you will have tried elsewhere, with a rotating list of special cocktails plucked from Lambert’s imagination. Expect classic cocktails with a contemporary edge and plenty of creativity.
Finally, reservations are a must at The Blind Pig, at which point the location of this exclusive enclave will be revealed and your speakeasy cocktail adventure can begin.
The Blind Pig’s offering changes frequently, but is always composed of intriguing concoctions – don’t expect a Daiquiri, Dirty Martini or Pina Colada here. For the classic cocktail lover, there is the 5 Barrel Old Fashioned crafted with The Blind Pig’s own bespoke bitters and Teeling Single Malt.
For something a little out there, try a Sweet Jebus, a heady mix of Ban Poitín and Georgia Moonshine guaranteed to awaken the taste buds and broaden your cocktail horizons.
Paul Lambert is an internationally acclaimed mixologist, previously heading up the cocktail offering at Diep Le Shaker, where he designed the bar from the ground up, having worked in some of the finest hotel bars in the country, including Kelly’s Rosslare and The Park, Kenmare.
On the 5th of December of 2011, Paul opened The Blind Pig to coincide with the 78th anniversary of the Repeal of Prohibition in the United States and has designed this unique space and cocktail menu to transport his guests back to the 1920’s, celebrating the innovative and inventive libations of the era. Paul believes in interacting with his guests to ascertain exactly what they want from a cocktail, and delivering a bespoke drinking experience.
