Considered by many to be one of the greatest chef, Ross lewis‘s Michelin Star Restaurant, Chapter One is without doubt regarded as the best in Ireland. Waiting for Ross at the Chef’s table overlooking the open plan kitchen, with chefs radiating energy as they cook and interact with each other, brought back many happy memories as I was fortunate to have been trained and worked here as a Chef many moons ago.

For a while now we have seen very tempting photos in our twitter feed from the Candlelight bar in Dundrum, always promising a visit, well last week we did just that. Location wise, it is situated in the outdoor courtyard beside the very popular Harvey Nichols. The Candlelight bar is actually part of the Siam Thai restaurant, however it is on the second floor completely separate from the restaurant itself.

Stanley’s was revealed rather quietly only four days ago and purposely so to iron out any opening creases. Run by brothers Stephen and Paddy McArdle of the much loved Arch Bistro in Churchtown, the guys have decided to bring Stephen’s modern Irish cuisine to the masses of the very busy St. Andrew’s Street.

Those that know me, know that I’m a passionate advocate for Craft Beer. Something though has irked me for a while. There is a sense of elitism, and excuse the pun, snobbery taking hold in some quarters. No different to how wines were promoted in the 80s. To me this doesn’t serve the wider industry well if we focus on one single segment.
