Bootlegger’s Sorbet – €10
The Bootlegger’s Sorbet is Head Mixologist and Bar Manager Darren Costello’s creation. Originally starting out as a desert-style drink based on lemon sorbet.
He wanted to develop something that was not the usual, long tall and fruity drink that is seen on a lot of menus, Bootlegger’s Sorbet is something with a little more substance.
Combining fresh lemon and vanilla flavours, the serving glass itself gets a spray of Dublin Poteen to give the cocktail a little more of an earthy feel, which acts as a base for the light airy notes of the sweet citrus flavours.
Situated on Aungier Street in Dublin 2, Bow Lane is an authentic, late night cocktail bar. Their focus is on providing craft-made quality cocktails, unique and mainline beers and spirits.

Darren Costello Heads the bar team in Bow Lane. One of Ireland’s most experienced mixologists with 20 years hard graft and trade skill.
As well as Ireland, he has worked in Covent Garden London, Brisbane and Melbourne before returning to work here heading up the bar teams in places like Thunder Road and Solas.
He represented Ireland at the 8th Finlandia Vodka Cup Finals in Jan 2006.
