Truffles Restaurant & Wine Bar in Kilkenny is Named Just Ask Restaurant of the Month for August

Selected by food writer Georgina Campbell and Bord Bia, the Just Ask Restaurant of the Month rewards eateries across Ireland that exhibit best practices in showing transparency in the sourcing of the food on their menus. This month, the prestigious title has been awarded to Truffles Restaurant & Wine Bar in Kilkenny.

Despite being one of Kilkenny’s newest eateries, Truffles has already established itself as one of the city’s most popular among locals and tourists alike.

With owner-manager Milko Mihaylov and Chef Lukasz Glab at the helm, this elegant fine-dining restaurant and wine bar is “Rooted in the Freshness of the Season”.

Staying true to this motto, Truffles lists their local suppliers and partners that speak volumes for the restaurant’s down to earth philosophy and all menus are designed to satisfy diners that may have allergies. Impressively, over 95% of dishes are also available as gluten, nut, dairy and shellfish free alternatives.

According to Milko Mihaylov: “All of our fresh Irish poultry, pork, game, lamb and beef are supplied by second generation craft butcher Pat Mullins of Mullins Butchers in Kilkenny City, while duckling is supplied by Silver Hill Foods in Co. Monaghan. Kish Fish in Dublin supply all fresh seafood including scallops, prawns and Irish crab meat.”

He added: “Reflecting the exceptional care taken with vegetarian and vegan dishes, organic leaves and root vegetables are supplied by Vincent Grace of Riverfield Farm in Callan and Edmundburry Greens Farm in Durrow, Co. Laois supply certified chemical free mixed leaves, microgreens and fresh herbs.”

“A selection of artisan cheese is supplied by The Traditional Cheese Co. in Dublin while flours and grains from the Mosse family’s seventh generation mill, Kells Wholemeal at Bennetsbridge, couldn’t be much more local.”

With its deep commitment to seasonality and local produce, Truffles has found its niche in Kilkenny’s vibrant restaurant scene and is sure to be a staple for many years to come.
