Make the most of Irish soda bread with this simple bruschetta recipe to celebrate National Bread Week 2016 (9th – 15th Oct).
Ingredients:
– 250g cherry tomatoes
– 1 tbsp oil
– 1 tbsp balsamic vinegar
– 2 tbsp chopped basil
– 1 chopped clove garlic
– 4 slices Irish brown soda bread
Method:
1. Mix cherry tomatoes in a small roasting tin with oil, balsamic vinegar, chopped basil and the chopped clove garlic and roast for 15 minutes.
2. Brush the Irish brown soda bread with oil and griddle for 1-2 minutes each side.
3. Top the toasted bread with the tomatoes and their juices. Serve and enjoy!
Ireland’s National Bread Week takes place from 9th to 15th October 2016, and is a chance for everyone to ‘Love Your Loaf’ and celebrate all that is great about Irish bread.
