I seriously love coming up with new ways to create protein rich snacks and meals that satisfy, delight and support my quest to build more muscle. This protein bars recipe is one of my favourite to date. I’m a chocolate girl through and through so when it comes to protein bars I find it hard to beat double chocolate almond butter and even cookie dough with chocolate chunks but these bars, infused with Pulsin’s new cacao butter buttons, give them a beautiful buttery flavour and texture that rivals the best of them.
The milky’ ness of the whey protein shines through, complimented perfectly by the subtle natural sweetness of vanilla. I kept these sugar free and chose to sweeten them much like my single serve protein bars, with liquid stevia.
FYI I’m loving the Pulsin cacao buttons as a completely awesome way to top up my fats. Don’t be fooled, they are not like white chocolate buttons, but if you crave fat and not sweetness they are the perfect little fat bomb nibble between or after meals. I also drop a few on top of my mug cake (or one of them, think it might have been number four before I finally cracked the recipe!)
I make a batch of protein bars every week, usually on a Sunday, slice and wrap them up on Monday and store them in the freezer. I prefer the super firm texture. I take them out about 10- 15 minutes before I want to eat one so they’re still nice and cold, a little more chewy than if I had kept them in the fridge and just slightly more satisfying for whatever reason. I’ll put it down to the chew factor!
The pistachio nuts and rose petals are of course optional but they add texture and prettiness to an otherwise very much “plain Jane” looking bar. You could switch it up with other nuts, some hemp seeds, coconut, ideally toasted or cacao nibs if you fancied them.
Note to self…do not eat all the cacao buttons, save some for further recipe testing! Of course some homemade chocolate, possibly of the protein variety is on the agenda!

Makes 8 large protein bars
– 1 cup (120g) raw cashews, soaked overnight in water, drained and rinsed
– 60g (1/4 cup) coconut flour
– 1 cup (250ml) warm water
– 1/4 cup (60g) cacao butter buttons, such as Pulsin cacao button drops
– 1 tsp vanilla powder or pure vanilla extract
– 8 scoops (250g) whey protein isolate
– 40-50 drops liquid alcohol free stevia or two your own taste
– 1 heaped tbsp chopped roast pistachios
– 1 tsp rose petals
1. Line an 8-inch square baking tray with baking paper and lightly grease with coconut oil.
2. Blend together cashews and water. Add the cacao butter and blend to combine.
3. Add the whey protein powder to the mix along with all the other ingredients with the exception of the pistachios and rose petals.
4. Blend until you have a thick puree/paste.
5. Scrape the mixture out into the pan, cover with a piece of parchment paper and press using your palms to ensure it’s evenly spread.
6. Remove the parchment paper, sprinkle with pistachios and rose petals. Cover with parchment paper once more and spread the dough evenly across the pan, pressing the toppings into the fudge ever so lightly!
7. Place into the fridge overnight or for at least four hours.
8. Slice into 8 bars. Store in the fridge in a seal tight container for up to one week or freezer wrapped in saran wrap (clingfilm) for up to one month.
