Rías Baixas is a region in Galicia, located in northwest Spain. It is a gorgeous, lush and green area along the Atlantic seacoast, directly above Portugal. Rías Baixas is also the name of the most important wine Denomination of Origin (DO) in Galicia. The word ‘Rías’ means estuaries and Rías Baixas means lower estuaries.
Albariño is a white grape variety. It is the signature grape variety from the region of Rías Baixas. Just like you might say Cabernet Sauvignon is the signature variety from Napa Valley.

This wine is traditionally made to drink young, upon release. The ideal time to enjoy it is now and often. That being said, some wineries are experimenting with aging their Albariño wines in either oak or stainless steel, producing wines that can be enjoyed for up to two or three years.
Rías Baixas is the birthplace of Albariño, producing its signature style to the highest quality standards. On each bottle of wine from the region of Rías Baixas, you can find a quality control sticker guaranteeing the quality and authenticity of the wine. Albariño is also grown extensively in neighboring Portugal, where it produces a lighter style of wine. In warmer regions it produces a riper wine with lower natural acidity.
Tetilla is a typical Galician cheese made from the herd of Friesians, Alpine Browns and Rubia Gallega cows. Since 1992, it has been one of the four cheeses that received DOP recognition. The name Tetilla is Galician for “small breast”, which describes the shape of the cheese – a pear shaped cone topped by a nipple.
This cheese has a pale yellow, thin, natural rind or sometimes no rind can be seen at all. Its texture is soft, thick and smooth with scatterings of air pockets. Yellowish ivory in colour Tetilla has a creamy mouth feel with buttery, slightly bitter and tangy flavours surrounding the palate. The maturing, which takes place between 10 and 30 days, happens in the hot and humid climate of Galicia.
Try Tetilla with dry full-bodied wine, sherry, young whites, manzanilla and especially the Galician whites – albariño or ribeiro. Spanish love their cheese with quince paste, fruit, crackers, baked dishes and bread.

How to use your Hamper
The most important thing is to chill the wines as they are better consumed chilled. Do not drink it straight from the fridge, let it breathe a little bit on the glass and get some room temperature.
The hamper comes with a sample of the tetilla cheese, very soft and creamy. It comes from Galicia as well so what a perfect companion for a glass of Albariño! We recommend pairing both. We encourage you to drink some wine, taste it, let it play with your senses and guess the flavors that come to your mouth. Some time after, try some cheese and enjoy it. Shortly after drink some wine and you will realize how different it tastes! Amazing, isn’t it.
You will also find in the hamper some olives, perfect with any white wine, but especially good with Albariño. There is also piquillo peppers and tuna belly. Now, what do I do with it? Sounds a little bit strange, don’t it? Well, here is tip. Use the crackers and place one into a plate, put a piquillo pepper on top and then cover it with some tuna. Then try it. Tasty! And it is so simple…
