Zuni, Restaurant, Bar & Boutique Hotel is delighted to announce the appointment of Michael Thomas as their new head chef. Michael, previously of Waterford Castle Hotel, has won numerous awards including “Best Chef of Ireland 2017” and “Best Chef Regional Winner of Munster” at the YesChef Awards 2017.
The award-winning chef is a Kilkenny native, hailing from Loughboy, and is now returning to his roots to take up the reigns at Zuni. Michael has spent over 22 years working as a chef and has earned his culinary stripes working in kitchens such as Lacken House under Eugene McSweeney, as Head Chef in Hayfield Manor and as Senior Sous Chef at the Radisson in Sligo.
Head chef Michael is the perfect fit for Zuni, as they both share a passion for supporting local producers and suppliers. Some of the fantastic local produce featured on the menu at Zuni include fish from Mag Kirwan in Goatsbridge Trout Farm, rapeseed oil from Second Nature oils in Urlingford, Duck from Mary and Tony in Kilkenny Free Range and vegetables from Eamon Wallace.
The appointment of Zuni’s new head chef follows on from Kilkenny’s recent win as Ireland’s Foodie Destination of the Year. This accolade reinforces Kilkenny’s reputation as one of the country’s best places for spectacular food. Michael says, “Home is where good food is, and that’s Kilkenny.”
