Allspice Dressed Carrot, Quinoa & Chickpea Salad Recipe by Goodfood Goddess

This Allspice Dressed Carrot, Quinoa & Chickpea Salad effortlessly bridges the gap between winter and summer. I love the fragrant allspice dressing as it has the beautifully warming flavors of winter while the mint hints of spring. If you are tired of boring sandwiches then this salad is just the thing you need to brighten up your lunches; it carries really well and is super quick to make. Packed full of protein rich quinoa and chickpeas as well as fibre this salad will keep you going until dinner.

Carrots are a great source of beta carotene which is converted to vitamin A in the body. Vitamin A is best known for its contribution to the maintenance of eye health. Carrots are also a rich source of potassium which is a key regulator of electrolyte balance in the body and necessary to ensure adequate levels of hydration. In addition potassium plays a role in the control of blood pressure as well as the maintenance of a healthy cardiovascular and nervous system.

Ingredients:

– 1 large carrot peeled
– ⅓ cup quinoa rinsed (I used tri colour quinoa)
– 1 small tin of chickpeas drained
– 2 tbsp dried cranberries
– 2 tbsp finely chopped mint
– 2 spring onions chopped
– 1 tsp maple syrup
– 1 tsp apple cider vinegar
– 2 tsp olive oil
– ¼ tsp ground allspice
– ¼ tsp Dijon mustard
– salt and pepper

Method:

1. Boil your quinoa in ⅔ cup of water for 12-15 minutes by which time it should be tender.
2. Transfer to a bowl and allow to cool.
3. Grate your carrot and add to the quinoa.
4. Also add in the dried cranberries, chopped mint, spring onions and chickpeas.
5. Combine all the ingredients for tghe dressing and mix well.
6. Season to taste.
7. Add the dressing to the salad just before serving. Enjoy!
