This Asian Grilled Salmon is so juicy and delicious you won’t want to cook it any other way once you’ve tried it! The Asian style slaw makes a perfect accompaniment.
Gluten Free, Dairy Free & Paleo
Ingredients:
Asian Grilled Salmon
– 2 salmon darns
– 1 red chilli, finely sliced
– 1 clove of garlic, crushed
– 1 inch of ginger, grated
– 2 tbsp sesame oil
– 2 tbsp coconut aminos
– 1 tbsp agave nectar
– juice of 1/2 lime
– small handful of sesame seeds
Asian Slaw
– 1 head of red cabbage
– 1/2 head of white cabbage
– 3 carrots
– 2 tbsp sesame oil
– 2 tbsp coconut aminos
– 2 tbsp agave nectar
– zest and juice of 2 limes
– 4 cloves of garlic, minced
– 1 red chilli, diced, seeds included
– 1 inch of fresh ginger, grated
– handful or sesame seeds
– a few leaves of fresh coriander and mint to garnish
Method:
1. In a bowl combine the chili, garlic, ginger, coconut aminos, sesame and agave.
2. Add the salmon and cover in the marinade and leave for 30-40 minutes until the flavours have infused.
3. Once you are ready to cook – preheat your grill/broiler to a high setting and place the salmon on a rack.
4. Pat on the excess marinade and place under the grill for 6 minutes.
5. Meanwhile prepare the slaw. Begin by grating the carrot & cabbage – I did this in a food processor to save time.
6. In a small bowl combine the garlic, lime zest, chili and ginger. Add the sesame oil, lime juice, agave and coconut aminos. Heat gently for 1-2 minutes until the flavours have infused.
7. Add the dressing to the cabbage and carrot and mix thoroughly. Scatter the sesame seeds and herbs on top.
8. Remove the salmon from the grill and sprinkle the top with sesame seeds and then return under the grill for a further 3 minutes until nice and golden on top.
9.Serve with the Asian slaw on the side and some extra lime wedges if desired.
