Quick And Easy Avocado Toast – Three Ways Recipe from Kate O’Brien’s GLOW

Avocados are bursting with healthy fats, omega 3 and antioxidants. They are a great breakfast or lunch option too, especially when time is tight. From avocado with perfectly poached eggs, with crumbled sharp feta and packed with protein these recipes are perfect for a healthy, quick meal.

When buying avocados look for soft, ripe and healthy-looking fruits. If they are bright green they are not ripe, so choose rich brown coloured avocados. Kate suggests using sourdough bread, as it is easier to digest and therefore better for your gut.

Ingredients:

Toast 1

– Mashed avocado
– Lime juice
– Black pepper
– Crumbled feta
– Chopped basil leaves or a dash of basil oil

Toast 2

– Mashed avocado
– Lime juice
– Black pepper
– Poached egg
– Smoked paprika

Toast 3

– Mashed avocado
– Lime juice
– Black pepper
– Edamame beans, shelled

Method:

1. Crumble feta cheese and chopped basil leaves or a dash of basil oil on top of the avocado.
2. Place a poached egg and a generous pinch of smoked paprika on top of the avocado.
3. On top of the avocado toast, place a handful shelled edamame beans – either mashed into the avocado or served alongside it.
