Makes 12 brownies
125g cooked beetroot (about 2 beetroots) grated
200g almond nut butter
200g dark chocolate
75g xylitol sugar alternative (available in stores as Total Sweet)
3 eggs
1tsp vanilla extract
30g chocolate or vanilla protein powder
60g ground almonds
1tsp ground cinnamon
1tsp bicarbonate of soda
1tsp baking powder
60g shelled hemp seeds
Method:
- Preheat the oven to 180C, gas mark 4.
- Place the nut butter, dark chocolate and xylitol in a pan a warm gently to melt the chocolate. Allow the chocolate to cool slightly. Place in a food processor with eggs, vanilla, ground almond, cinnamon and soda and process to combine. Process in the beetroot. Stir in hemp seeds using. Spoon the mixture into a square 20cm / 8inch baking tin.
- Bake in the oven for 20-25 minutes until golden brown and firm to touch. Cool then cut into bars.
