Brown Thomas Dublin Launches new bar at The Restaurant by Johnnie Cooke

The Restaurant by Johnnie Cooke now serves an extensive and carefully curated selection of innovative cocktails, premium spirits, fine wines, champagne and craft beers. Fusing tradition and innovation, this exclusive menu has evolved from Cooke’s appreciation for the five fundamentals of culinary mixology: simplicity, seasonality, quality, creativity and taste.

Savour inimitable classics with the extensive selection of the very best Irish and international whiskey and gin, or take a dip into the unknown and opt for Cooke’s expertly blended contemporary cocktails using choice spirits, homemade seasonal ingredients and a dash of creativity and imagination.

The Classic Cocktail menu represents the best of mixed drink classics using only the purest ingredients and choice spirits including the legendary Dry Martini with Stolichnaya Vodka or Bombay Gin and Dry Vermouth topped with a green olive. Not to be missed are Cooke’s Signature Gin & Tonics combining the perfect herb and spice blends with a choice of twelve premium gins including many of Ireland’s bespoke gins which are produced in small distilleries around the country. Choose from the London No 1 with pomegranate seeds, fresh basil and pomegranate tonic or Copperhead with orange peel, coriander leaves and Indian tonic.

The indulgent collection of Champagne Cocktails at The Restaurant by Johnnie Cooke include a refreshing Tintoretto with the finest Champagne and a splash of fresh pomegranate juice. Those wishing to abstain from alcohol can choose from an assortment of non-alcoholic cocktails such as the Drivers Razzmopolitan with cranberry juice, lime juice and raspberry purée.

With a nod to the fashionable surroundings, the specially created Fashion Fizz delivers a sumptuous tasting cocktail with its mix of Kalak Vodka, elderflower liqueur, white wine, peach liqueur and white lemonade, topped with mixed berries.

For the perfect accompaniment to any of the refreshing cocktails taste the Mediterranean flavours of Cooke’s new Tapas menu including dishes such as Spanish Acorn fed Ham ‘’Pata Negra’’ hand sliced with grilled ciabatta , the classic crispy Fried Calamari with spicy tomato sauce and roast garlic or the Gambas al Ajillo prawns with garlic herb butter and rustic Camprini bread.

Cool down with the finest Irish craft beers and ciders from Killarney Scarlet Pimpernel to Longueville House Cork Cider and Porterhouse Oyster Stout and savour these regional tastes which have all been carefully selected to complement the delicious food offering in the Level 3 eatery.
