Theo designed this burrito bowl recipe as part of Uncle Ben’s ‘Make a Healthier Plate with Ben’ campaign inspiring people to make a healthy meal fast.
Ingredients:
– 1 pack Uncle Ben’s Brown Basmati Rice
– 2 chicken breasts
– 1 red pepper
– 2 plum tomatoes
– 4 spring onions
– 1 red chili
– Handful of dill
– 1 lime
For the guacamole:
– 2 Avocados
– 1 clove of garlic
– Handful of coriander
– ½ red onion
– Fresh lime juice
For the yogurt dressing:
– 150g natural yogurt
– 2 clove of garlic
– 1 tbsp tomato puree
– 1 tsp paprika
– Juice of half a lemon
– Salt and pepper
Method:
Make the bowl base
1. Pop the chicken into the oven for 20-25 minutes.
2. Alongside this, put a few red peppers in the oven for 15 minutes.
3. Add 2 plum tomatoes, spring onion, red chilli, dill, olive oil, salt and pepper to create a fresh salad base.
Make the guacamole
1. Add the avocados, garlic clove, coriander, finely chopped red onion and some fresh lime.
2. Smash the avocados
Make the yogurt dressing
1. Add natural yoghurt, 2 garlic cloves, tomato puree, Salt & Pepper, Paprika and a squeeze of Lemon
2. Take your chicken out of the oven and dice
3. Heat Uncle Ben’s Brown Basmati Rice
4. Serve with Uncle Ben’s rice, a selection of salsa, guacamole, side salad and some dressing and serve!
