Chef Paul O’Connor has marked his recent appointment as Head Chef at the Cahernane House Hotel, Killarney with the addition of 2 AA Rosettes for the four star hotel’s Herbert Restaurant. The hotel, an elegant 19th century manor house on the edge of Killarney National Park, recently re-opened under new ownership.
Paul brings extensive experience from a career that includes award winning establishments such as the Sydney Opera House and, closer to home, Sheen Falls in Kenmare, Killarney’s Lake Hotel, which received its first AA Rosette under his guidance, and more recently the Muckross Park Hotel.
Commenting on the appointment, Emer Corridan said: “Paul is a very welcome addition to our team. We want to delight guests with our cuisine at the Cahernane House Hotel and we look forward to the new and exciting menus that he will create for our guests.”
Paul creates menus with influences from Ireland and Europe using the finest locally sourced, seasonal produce with some modern touches and techniques.
