A new beginning is about to take place for chef Tom Walsh as he takes over the food offering at the Portmarnock Hotel & Golf Links. The hotel is undergoing a massive redevelopment which is due to be completed in August and will overhaul both its restaurants.
Tom comes to Portmarnock with an impressive CV and a wealth of experience, having worked in some of the best hotels and restaurants. Originally trained in Dromoland Castle, Tom has worked in Clontarf Castle, Aqua, Luttrellstown and Roganstown.
Tom’s first offering at Portmarnock will be the Seaview restaurant which is scheduled to open in early June. He wants to create a unique dining experience for his guests. “The location of the hotel in such a wonderful setting has been well documented. My brief is to create a food offering that matches the setting, bearing in mind our diverse clientele which includes both Irish and overseas visitors, golfers and perhaps most important of all our local community who are great supporters of the hotel.”
Tom will be developing new concepts for the Seaview restaurant, the Osborne restaurant and the Jameson Bar. “We have exciting plans for all areas and all will reflect my philosophy of food – great fresh ingredients, sourced locally where possible, which we will bring to life in an appropriate and affordable way. I see the Seaview doing light and zesty salad and seafood dishes at lunchtime, the Osborne being our fine dining area and the Jameson doing superior gastro bar food, particularly for our golfers.”
Speaking about the partnership, Resort Director Barry O’Connor said he was excited by the plans. “From the outset we have seen this as a true partnership with Tom – an opportunity for him to take the experience he has amassed over the past 20 years and to showcase it at Portmarnock. It really is an exciting development for us all.”
