Hector Visits Drummully Boxty as Part of The SuperValu Food Academy Tour

Food Academy is a joint initiative between SuperValu, Bord Bia, the network of Local Enterprise Offices and was established to support early-stage Irish food businesses. To celebrate five years of Food Academy, Hector travelled the country to visit producers involved with the initiative, this week stopping off in Co. Cavan to meet the family behind Drumully Boxty.

Drummully Boxty dumplings are a family produced product with numerous benefits. A gluten free, low fat potato dish, the dumplings are made from the very best Irish potatoes to create a tasty, convenient and versatile addition to many dishes.

Paul Farrelly began making Drummully Boxty on Drummully Farm in Killeshandra, Co. Cavan back in 1983 alongside his mother. At the time, Paul had lost his job in costruction and the family needed to put their thinking caps on and look to what they knew best to find another way to support the farm. It was then that they decided to work together to start making boxty and sell it to local shops.

Over thirty years later their company is still going strong, distributing their unique product around Ulster, Connaught and Leinster, increasing in popularity over the years and seeing a rise in demand for this traditional Irish food.

Drummully Boxty is made using just two entirely natural ingredients – potatoes and salt. Dating back to the Irish famine, where is was known as a peasant food and called “Aran bocht tí”, “Bacstaí” or poorhouse bread, Boxty is a dish rich in history. The Drummully Boxty recipe has been handed down through previous generations and offers an authentic taste of times gone by.

The mother and son team were the first producers of the gluten-free Boxty, which is now a favourite for coeliacs all over the region and is also highly recommended by slimming groups all over the country.

Naturally gluten, dairy and egg free, Drummully Boxty is a “syn-free” product which is a huge plus for those looking to watch their weight. The boxty can simply be fried in one calorie spray oil and served with healthy boiled or scrambled egg for the ideal slimmer’s meal.

During Hector’s visit, Paul demonstrates how a little bit of elbow grease and good quality potatoes are the only ingredients needed to make this versatile and tasty dish, which makes for the perfect accompaniment to a full Irish breakfast.

Speaking on the opportunities afforded to them as a result of taking part in Food Academy, Paul said that: “We are very fortunate to been part of the SuperValu Food Academy programme since 2014, which has been a huge drive for us to expand. It has been a very rewarding and positive experience. It’s a fantastic platform to progress and a brilliant opportunity to drive our business forward.”

Our in-store tastings and local shows have been fantastic opportunities to promote our product and meet our customers and it has made us realise that people love to see the real people behind the product,” Paul added.
