Wexford’s Ferrycarrig Hotel Unveils A Stunning Seasonal Summer Menu

Wexford’s four star Ferrycarrig Hotel has unveiled an exciting seasonal summer menu. Filled with stunning local produce Reeds Restaurant at the Ferrycarrig focuses on using the finest ingredients. It currently holds two AA Rosettes and has been voted the Best Hotel Restaurant in Wexford 2016 and 2017.

Executive Chef Tony Carty stays true to his ethos and has created a menu full of award winning Wexford food producers. Commenting on the restaurants commitment to using local produce Chef Tony said;

“We pride ourselves on the use of local, quality food produce at Reeds. Wexford and the Southeast region is rich in award-winning food produce and it is vitally important to us to use the very best ingredients, so it is wonderful to work with all of these local suppliers. It enhances our menu and our diners very much appreciate the dining experience.”

A light summer starter of Meadowfield Farm Goats Cheese Parfait with toasted hazelnuts, sugar cured Enniscorthy rhubarb, and Tom Cleary’s beetroot with banyuls vinegar dressing will surely tempt hungry diners.

As will the 3 Ways with Salmon with Jameson Irish Whiskey featuring “Grav Lax”, Hot House “Smoked” Blackwater Gin & Elderberry Tonic “Tartar”.

Main courses include local Pan Fried Kilmore Brill with saffron potato, courgette ribbons in dill butter with white wine & herb cream sauce and a Rack of Slaney Valley Lamb with gnocchi Piedmontaise, spinach & wild garlic puree, heirloom baby carrots and mint gel.

For dessert, Wexford’s famed strawberries will of course be making an appearance with a heavenly dish of Strawberries Three Ways featuring strawberries & cream, strawberry, mint & prosecco jelly and a strawberry pavlova
